Coconut Crisp

Coconut: Love it or Hate it?  When it comes to this tropical fruit, I am all about it.  Especially recently, due to a couple of health issues in the family, I have been baking with coconut products quite a bit.  This is however my first time baking with coconut flakes.  I find it really interesting to get a full of flavour, rich, creamy and aromatic cookie with just few ingredients.

Cream Cheese Butter Cake with Light Lemon Curd Buttercream

Bright, blooming flowers are magnets to bees.  Just like how this vibrant yellow cake captivated my daughter's attention.  She was hoping her mischievous snowman ("Snowgies" or "Snow Babies") could sneak away the entire Cream Cheese Butter Cake.  Fortunately, I was quick enough to slice them into ninth.

We both started having one ninth of the cake at the same time, but I stopped half way to get a good shot of the cake.  By then, she had finished her portion and jumped over to photobomb me with her thumbs up, "It's divine, Mum.  The lemon curd is so delicious!!"

Golden Swan Puffs (Perfect Savoury Cream Puffs)

After reading Rose's recipe, my daughter decided for me to go with the extra light and airy puff (Deluxe Puff variation), lightly sweetened whipped cream filling and swan shaped puffs.  When I asked if she would give the chicken liver filling a try, she exclaimed, "You've gotta be kidding me!".  Being a nice mum, I fulfilled her desired swan puffs.

Molasses Butter Sugar Cookies

Last week, I hosted a special guest from UK.  Since everyone would come to Penang for its popular local hawker delight, originally thought of skipping this week's Molasses Butter Sugar Cookies (from Rose's The Baking Bible) as we might not have sufficient time and stomach room to consume these cookies.  So glad I made these cookies - my visitor described them as everything a good cookie should be.

My First Pie - Cherry Sweetie Pie

There's something about pie crust that scares me off even more than bread making.  I am deeply fearful of failing to make a flaky crust and the entire pie making process.  Such a loss - I kept The Pie and Pastry Bible by Rose Levy Beranbaum in the book shelf for so many years.
